Anne's Stuffed Pepper Recipe

Anne created this impeccable chicken stuffed pepper recipe! 😍😍😍 This is another great meal to make on a cold dreary day and trust us. Paired with a vegetable and a salad and you have yourself dinner on the table in about an hour. It's also beefy enough that it can easily be meal prepped. Give it a try! 

  • ✅ 1 Chicken Sausage Pack parboiled and roughly choped⁠
  • ✅5-6 Red Bell Peppers (depending on size), tops and cores removed⁠
  • ✅1 Box Long Grain Rice, prepared per package directions⁠
  • ✅1 cup Mexican Cheese, divided⁠
  • ✅1 can Diced Tomatoes, drained⁠
  • ✅2T Tomato Paste⁠
  • ✅1 1/2t Dried Oregano⁠
  • ✅Kosher Salt⁠
  • ✅Freshly Ground Black pepper⁠

  1. 📍Preheat the oven to 400°F.
  2. 📍Spray a 9 x 9 baking dish with oil or cooking spray⁠
  3. 📍Parboil the Sausage and roughly chop⁠
  4. 📍Return Esposito Sausage to pan and cook over medium heat until cooked through.⁠
  5. 📍Combine Esposito Sausage, rice, dice tomatoes, tomato paste, 1/2c cheese, and spices⁠
  6. 📍Place peppers cut side up on baking dish and spoon sausage into each pepper.⁠
  7. 📍Top each pepper with remaining cheese⁠.
  8. 📍Cover with foil and bake for 35minutes⁠
  9. 📍Uncover and bake for 10 minutes more
  10. 📍Remove from oven and enjoy!
